Cowboy Mike's Stuffed Brie Burger

Yeah, that's right. Cowboy Mike knows and uses brie!


  • 1/2 lb 80/20 ground chuck
  • 1 oz of brie cheese
  • 1/2 cup sauteed yellow onion
  • 1 Tbsp red pepper jelly
  • 1/4 cup arugula
  • 1 Tbsp olive oil
  • 1 grilled ciabatta roll
  • Salt and pepper


  1. Add olive oil to saute pan and add sliced onion, saute until golden brown.

  2. While onions are cooking, split the burger into two equal patties. Add brie to bottom patty and place the other on top, pinching sides to seal. Salt and pepper both sides.

  3. Grill to a perfect medium rare. The patty cooks quickly because the patties are thin top and bottom.

  4. Grill the roll, spread pepper jelly on top and bottom bun. Place burger, add onions and arugala. Serve with your favorite sides, but you won't eat them. The burger is that good!
