Fried Kumamoto Oyster, Ponzu Mayo and Steak Tataki "Surf and Turf"

I started getting in the kitchen when I was 10. My parents are divorced, so they would take me out to eat every week and while they worked during the rest of the week, I would recreate the dish that we had, improve upon it, and it was always better than any of the restaurants.
Ingredients
- 3 Kumamoto oysters
- 1/4 cup all-purpose flour
- 2 eggs
- 1/2 cup panko breadcrumbs
- 5 tablespoons + 1 teaspoon ponzu sauce
- safflower oil
- 1 New York strip steak
- 1 lemon
- 1 cup mayonnaise
- salt and pepper
Directions
Season steak with salt, pepper, 1 tablespoon ponzu, and lemon, marinate for 10 minutes.
Mix mayonnaise with 4 tablespoons ponzu sauce.
Beat two eggs, season with salt, pepper, one teaspoon of ponzu sauce.
Fill a fryer or frying pan with 3 inches of safflower oil, heat.
Dip oysters in egg wash, dredge in flour until coated.
Fry oysters until golden brown, roughly 20 seconds. Set aside.
In a hot cast iron skillet, sear steak on all sides, 20 seconds per side.
Slice steak, place ponzu mayonnaise on top, then top with fried oyster.
