Poblano and Scallop Risotto

For the poblano sauce

  • 2 poblano chiles


To make poblano sauce

  1. Roast the poblano chiles over a gas flame or in the broiler until the skin is charred all over. Place the chiles in a medium bowl and cover with plastic wrap to steam. Let the chiles steam for about 10 minutes.
