After Tennille's elimination, Dave, Ariel and Kevin leave the kitchen in excitement after spending some quality time with their family. In the morning however, one chef, Dave, is up before the rest. After seeing his family, winning the competition is more important than ever to him. Being that Araxi Restaurant and Bar has international appeal and its home, Whistler, British Columbia, is hosting the 2010 Winter Olympics, the chefs must be able to cook cuisines from all over the world. A random draw leaves Ariel cooking a Chinese dish, Kevin making Mexican and Dave Indian cuisine.
With forty-five minutes to create his entree and never having made a single Indian dish, Dave starts off very flustered. Dave decides to use pork only after remembering that the cow is worshiped in India. Kevin quickly decides on a dish and is preparing a delicious mole sauce that he feels will take it to the next level. Chef Ramsay announces that there will be 3 surprise judges there to help him judge the challenge, all of which are experts in a different type of cuisine.
Ariel's dish is deemed fair, as is Kevin's despite the absence of his mole sauce, which he simply forgot to add. Dave nervously presents his dish to the three judges. Surprisingly, all three guest judges and Chef Ramsay prefer Dave's Indian dish and he wins the challenge. For punishment, Kevin and Ariel will have to clean and prep for tonight's dinner service under the J.P's supervision. Dave is rewarded with an unexpected three-course lunch with his fianc? and sister that will be cooked by the famous international chefs / judges.
Before dinner service, Chef Ramsay explains that each of them will be given the reigns to run the pass during service. Unbeknownst to them, Sous Chefs Scott and Heather, who are both helping to cook to form a complete kitchen, will be testing them with sabotaged dishes. Kevin is the first to lead service and takes command quickly, catching a halibut, which was supposed to be a sea bass.
When it's his turn, Dave immediately shows an aggressive leadership style that no one has seen from him in Hell's Kitchen. Despite getting caught sending out risotto with the wrong puree and tuna that was not seared, Chef Ramsay complements Dave on his ability to effectively run the kitchen. Ariel is the last to run the pass and confuses parsnip puree for mashed potatoes among other mistakes but is commended for capably running the pass. The three finish dinner service and Chef Ramsay asks for each of them to nominate one of the other two competitors for elimination.
At elimination, Kevin selects Ariel for her lack of communication during her time at the pass. Ariel nominates Kevin for his lack of teamwork and Dave selects Ariel due to the amount of confusion present when she led. Chef Ramsay chooses Dave and Kevin as the final two as massive screens of the finalists drop in the dining room and congratulates Ariel for her hard work as he bids her adieu. Chef Ramsay announces that their biggest challenge is about to commence and the episode ends.
