When dinner service last ended, Chef Ramsay had asked for a volunteer from the women's team to join the men's side. They all want to switch over and pull a name from a hat, but that solution is unacceptable to Chef Ramsay, who demands they put some thought into picking a chef to trade teams.
Nedra once again volunteers, but the Blue Team is less than thrilled to have her as their new teammate. They consider it sabotage.
The next morning, Chef Ramsay meets the contestants in the dining room for the International Challenge. He introduces models representing eight countries, and they each stand by a gift box wrapped in that nation's colors.
The players spin a wheel to determine which country's cuisine they will prepare. Mary and Jon go first, and the pointer shows Indian. The model opens the gift box to reveal the ingredients they will cook with, including chickpeas, basmati rice and lentils.
Nedra (now cooking for the Blue Team) and Ja'Nel spin and land on Thai cuisine, meaning they must create their dishes using lemongrass, coconut milk and jasmine rice. Susan and Zach will be cooking with Japanese ingredients such as soy sauce, bok choy and daikon radish. Cyndi and Anthony must prepare Greek food using Kalamata olives, yogurt and grape leaves.
The contestants have 45 minutes to create a stunning ethnic dish. When time is up, Chef Ramsay brings in Dana Bowen, Executive Editor of Every Day With Rachel Ray, to help judge.
Mary and Jon present their Indian dishes. Mary's lamb is a hit, but Jon's tandoori chicken is also delicious, and the Blue team gets the point.
Nedra's curry calamari is not typical Thai food, and the flavors are off, but Ja'Nel's steamed halibut is beautifully presented. The Red Team ties the score.
Cyndi's stuffed chicken roulade is seasoned beautifully. Anthony's seared lamb is also nicely cooked, but the plum is muddying the flavors. The Red Team wins the Greek round.
Chef Ramsay and Dana praise Susan's Japanese miso dashi, but Zach's pan-seared chicken does not impress. The women's team wins yet another challenge.
As a reward, the Red Team gets a shopping spree at Kitson, lunch at Mr Chow and a set of All-Clad cookware. The Blue Team is left behind to unload a wine shipment, clean the stemware, cut 40 pounds of lemon and lime wedges and prep both kitchens for dinner service. Right before the doors open, Nedra discovers her Blue teammates have failed to set up her station, and she scrambles to get ready.
As the patrons arrive, Ja'Nel is on fish and Susan is on appetizers for the Red Team. Susan immediately angers Chef Ramsay by cooking more risotto than she needs.
In the Blue Kitchen, Nedra is leading the charge on the appetizers, but her risotto is too salty. Anthony steps up and leads his team. They finally get some appetizers out of the kitchen.
In the Red Kitchen, Ja'Nel only cooks one side of her scallops and brings the team to a complete halt. The second attempt satisfies Chef Ramsay and they are back on track.
Nedra struggles as the newest member of the Blue Team but refuses help from her fellow chefs. Over an hour into dinner service, the Red Team has moved on to entrees, but the Blue Team is still stumbling through appetizers. Chef Ramsay kicks the men and Nedra out of the kitchen. When Ja'Nel delivers raw fish to the pass, he throws all of the women out of the kitchen too, shutting down Hell's Kitchen.
Chef Ramsay asks both teams to name their weakest cook. The Red Team picks Susan, and the Blue Team puts up Nedra. After they both plead their cases to stay, Chef Ramsay decides to send Nedra home.
