Two years ago, I quit my job in finance, moved to NYC and enrolled in culinary school. A couple months earlier, a teammate and close friend of mine from the University of Virginia was pursuing his dreams to be a US Olympian in open-water swimming and died during a competition. I decided the only way to live is to embrace challenge, pursue passion and live your dreams at any cost.
To open my mind and see what culinary perfection looks like. And of course, to work with the charming and badass Chef Ramsay.
I enjoyed being yelled at by Chef Ramsey. Any mentor/coach that yells means that they care.
Fight with all your heart, open your eyes and be fully aware of everything that is going on around you. And whether you want to or not… respond YES CHEF!
I love braises. Moqueca – a traditional Brazilian fish stew a close friend shared with me. A healthy and fresh dish; It is slow-cooked which gives plenty time to spend with friends and family to enjoy good wine and some caipirinhas.
Cooking is about love, so my secret ingredient is love.
Attitude is everything – a motto I lived by my entire life.
