The Ultimate New England Turkey In The Orchard Burger

The Ultimate New England Turkey in the Orchard Burger is inspired by AJ's and my time in Barnard, Vermont. Whether it's skiing, hiking, swimming or sitting by the fire and watching the snow fall, we love the healthy, harvest flavors of Vermont. Here's a bite of foliage in the Green Mountains!

Ingredients

  • 1/3 lb turkey patty (93% lean mixed with an egg, paprika, salt and pepper)
  • Aged cheddar cheese (we love Shelburne Farms cloth-bound cheddar)
  • Cranberry chutney (see below)
  • Apple-smoked bacon (bonus points if from a farm in Vermont)
  • Baby kale
  • Red onion, shaved
  • Granny Smith apple, shaved
  • Roasted garlic mayo (see below)
  • Brioche bun

Cranberry Chutney

  • 4 cups frozen cranberries
  • 3 cups dried cranberries
  • 1 1/2 cups raisins
  • 3/4 cup brown sugar
  • 2 Tbsp lemon zest
  • 1/4 cup lemon juice
  • 2 Tbsp apple cider vinegar
  • 1 cup walnuts, chopped
  • 2 Granny Smith apples, peeled and diced
  • 2 Tbsp fresh ginger, minced
  • 1 Tbsp ground clove
  • 1 tsp allspice
  • 1 1/2 cups water

Garlic Mayo

  • 2 egg yolks
  • 1 Tbsp dijon
  • 2/3 cup peanut oil
  • 1/3 cup olive oil
  • 1 Tbsp lemon juice
  • 3 Tbsp roasted garlic

Directions

To make the cranberry chutney

  1. Mix frozen and dried cranberries, add water

  2. Simmer 20 minutes

  3. Add remaining ingredients, simmer 1-2 hours
