Rack of Lamb with Parsnip Puree, Spring Vegetables, and Green Curry

For the final challenge, Josh and Christine had to present a three-course meal to the Gordon, Graham, and Joe. For his entree, Josh went with rack of lamb drizzled with a green curry and accompanied by a mix of vegetables.

Although Gordon was a bit confused by having ingredients from different seasons on one plate, Joe loved the mix of spring lamb, summer peas, autumn carrots, winter parsnips, declaring it to be "an orchestral composition of mythical proportion."

Ingredients

For the lamb and curry

  • One 8-rib frenched rack of lamb (about 1 3/4 pounds)

Directions

To make the lamb and curry

  1. Preheat the oven to 400 degrees F. Heat a 12-inch cast iron skillet over medium-high heat until hot.
