Crispy Skin Rockfish with Cauliflower Puree and Pickled Radishes

After winning the uni Mystery Box Challenge, Felix tried to trip up Becky by assigning her the rock fish, a tricky to fillet and de-bone fish. However, Becky rose to the challenge with this beautiful dish that kept her safe for at least another week.

Ingredients

For the fish

  • Four 5- to 6-ounce rockfish fillets with skin, scaled

Directions

To make the fish

  1. Using a sharp knife, score the skin on the fillets. Season the skin liberally with salt and pepper, pressing the seasoning into the cuts. Dredge the fillets through the flour to coat lightly, shaking off any excess flour.
