La Galleria 33, Pt. 2

In the last episode of "Kitchen Nightmares," Chef Ramsay traveled to Boston's North End to visit La Galleria 33, a restaurant run by sisters Rita and Lisa. He quickly discovered the establishment to be fraught with issues. Rita smokes and Lisa drinks on the job, and their unprofessional behavior has lost them the respect of their staff. The food, which is prepared by Rita's ex-husband Doug, is horrific. Chef Ramsay finds it to be frozen, bland and evidently made without passion.

As the dramatic conclusion to the saga begins, Chef Ramsay has a heart-to-heart talk with the siblings, imploring them to strive for excellence. Rita concedes that they have to fix their problems, but Lisa asks to be left alone.

The sisters tell Chef Ramsay that the staff doesn't respond to them, and he begs them to stop tiptoeing around the issues. In an attempt to give the proprietors some focus, Chef Ramsay asks them both to make a list of all the things that bother them the most that they want to change.

The next morning, he gathers the owners and staff so that the sisters can share their agenda of issues. Rita kicks off the meeting by saying they would like the employees to stop treating La Galleria as if it were a competition to see who can do the least. Most of the workers, except Sarah the waitress, admit to being lazy.

When Rita tells Doug that he can't take criticism, the exes begin to argue. Chef Ramsay points out that the vibe is "oozing negativity beyond belief."

Yet Sarah disagrees and says she doesn't want to be the target of generalizations with all of the employees. With that, Lisa tells her that the other servers don't want to work with her because they think Sarah is a "money grub" who hogs all the tables. Busboy Pat supports the claim that the waitress has never shared more than 15% of her tips with him. A disgruntled Sarah storms out as Lisa tells her, "It's time for you to hit the road."

Chef Ramsay uses Sarah's departure as an example to the sisters that they can't be beholden to one member of their staff. The sisters accept the blame and agree that they must set the rules for all of their employees.

Lisa agrees to give up her drinking. Rita promises to stop smoking and announces that she is taking back control of the restaurant's operations. The staff also agrees to change.

When Chef Ramsay returns to the restaurant later, Rita tells him that she has a surprise for him. She takes him into the kitchen and serves him tiramisu she prepared that morning. She's relieved when he tells her it's delicious.

As he rallies the troops, Chef Ramsay asks the team how they think they can stand up in the competitive North End neighborhood. He shows them photographs he took at dinner service the night before. They can't identify the items in some of the pictures and admit that in general the food does not look appetizing.

Chef Ramsay then presents images from some of Boston's best Italian eateries, and they admit that some of the dishes look like works of art. When Doug tries to attribute the differences in the photographs to framing, the world-renowned chef challenges him to learn and improve his game. As Rita realizes that she may need to look for a new head cook, Doug agrees to rise to the task and listen to any ideas that help raise the bar.

With more than 80 Italian restaurants in the North End alone, Chef Ramsay realizes that La Galleria 33 needs something extra to help it stand out from the competition. He presents a new menu of small plates of classic Italian cuisine, including homemade meatballs, roasted chicken livers blended with butter, truffle and lemon asparagus risotto, and arancini with sun-dried tomatoes.

Doug admits he is nervous that he can't make the new dishes, but his team offers him encouragement. To help him out, Gordon introduces Chef Michael, who will spend a month at La Galleria 33 helping them implement the menu and maintain the standards.

With everyone committed to change, Chef Michael goes right to work teaching Doug how to execute the new menu. Later that night, Chef Ramsay's team turns their attention to transforming the décor of La Galleria 33.

When the sisters arrive the next morning, with Sarah in tow, Chef Ramsay tells them that they are about to cement the future of the restaurant, and he reveals a chic, romantic renovation.

That night at the relaunch, Rita and Lisa want to make sure that everyone is focused on the job at hand by offering words of encouragement and a few guidelines. But Chef Ramsay is concerned when the servers are unable to describe the night's dishes.

As the guests start to place their orders, the staff struggles with the computer system, and they must revert to handwritten tickets. In the meantime, Chefs Doug and Mike work together to push out orders, but are encouraged as the small plates are well-received by the diners. La Galleria 33 looks to be on its way to recovery, and Chef Ramsay's work there appears to be complete.
