With the elimination behind them, Russell is fuming mad that he was put on the chopping block and accuses Trev of making a "strategic move." The next morning, the remaining seven contestants meet Chef Ramsay in the dining room, where he explains that he's concerned they're not communicating properly. Their next challenge will focus on communication and timing. As a team they'll have 30 minutes to cook three entrees from the menu: tagliatelle, salmon with lobster ragout, and poached chicken. But only one team member is allowed in the kitchen at a time for five-minute shifts. In between, they'll have just 15 seconds to explain to the next chef up what's been done and what needs to happen next.
Russell and Sabrina are first. Both start rolling out the pasta, and Sabrina gets the lobster cooking. Next, Jillian gets the sauces going and pulls the lobster out of the pot, while Trev starts sautéing garnish. The problem isn't that he didn't cook the lobster, but that he didn't communicate that to Vinny, who's up next. The Red Team runs into trouble when Gail gets up to bat and doesn't seem to accomplish much of anything. When it's Trev's turn again, he still doesn't cook the lobster, which means it falls upon Vinny during the last round to quickly poach just the tail. As Jillian winds up things for her team, she makes the fatal mistake of dropping the salmon on the floor. That means they present the lobster ragout without the entrée. Though the garnish tastes delicious, the point must go to the Blue Team.
Next up is the tagliatelle. Chef Ramsay calls the Blue Team's pasta bland, and while the Red Team's is over-sauced, it's much better seasoned. With the score tied, it comes down to the chicken. Both teams' string bean garnishes are raw, but Chef Ramsay gives the point to the guys. As a reward they get a shopping spree at kitchen supply store Sur la Table and a lunch at swanky restaurant Melisse. The losing ladies have to stay behind and collect deliveries for the restaurant. While the guys enjoy their day out, Jillian tries to shift blame for her team's loss to Gail, who didn't properly blanch the green beans.
When the men return, sous chef Scott relays Chef Ramsay's message that the teams will design their own menus for the next day's dinner service. As the guys disagree about what to add to the menu, the ladies fare a bit better, though Sabrina is left unimpressed with her team's decisions.
After both teams finally set their menus, most of them hit the hay. Trev and Vinny, however, decide to drink the night away in the hot tub and badmouth Russell. After Russell catches wind of what they're up to, he lays into the two, but they don't seem to care . . . until the next morning when they wake up hungover.
The next day, both teams prep their newly created menus and get ready for one of their biggest dinner services yet. The Red Team's menu features wild mushroom risotto, a New York strip, and lobster capellini, while the Blue Team's menu includes ricotta ravioli, grilled lamb chops, and roasted sea bass.
After the doors open, customers get to choose which menu they'd like to order from. As the tickets start coming in it becomes clear the women's menu is more appealing. The guys are puzzled . . . and frustrated. Lucky for them, Chef Josiah Citrin, owner of Melisse, where the guys dined the day before, shows up and decides to order from the Blue Kitchen.
Nona doesn't get off to a great start when she undercooks the risotto, but quickly recovers and gets the appetizer station under control. When the Blue Kitchen finally gets some orders, Russell manages to impress Chef Ramsay with his appetizers. But when it's time move on to entrees, Vinny isn't ready. He's forgotten to prepare the lamb! Chef Ramsay isn't happy because the dish is going to Chef Citrin's table. Uh oh. Vinny only makes things worse for himself when he sends an improperly cooked lamb to the pass, sending Chef Ramsay into a fit. Thankfully, Russell steps in and makes sure that Chef Citrin gets his dinner. But the award-winning chef doesn't care for the lamb.
The women have also moved on to entrees, but Gail messes up her lobster entrees six times! After some prodding from Chef Ramsay, the ladies start getting their entrees out and Chef is pleased with Sabrina's steaks.
Back in the Blue Kitchen, Vinny gets another chance to prove himself, this time on the fish station. Unfortunately, he fails yet again. And so does Gail, who messes up her lobster pasta for a seventh time! Chef Ramsay reaches his breaking point and kicks her out. Gail feels awful.
After both teams pull together to complete their services, the restaurant shuts down and Chef Ramsay lets all of the chefs know he's not happy. That means there's no winning team. He asks all of them to come up with the one individual - from either team - who they think doesn't belong in the final six. After debating up in the dorms, it's time for the moment of truth: Russell votes for Vinny. Vinny and Trev say Sabrina. All of the ladies think Trev should go. Lucky for Trev, Chef Ramsay doesn't agree and decides Trev should make it to the final six. And so should Jillian, Nona, Russell, and Sabrina. They all get a coveted black jacket. Chef Ramsay asks Gail and Vinny to step forward and tells them they're the two weakest chefs, but Vinny will be the one to go. Chef Ramsay simply didn't expect such a dismal performance this far down the line.
