The girls begin trying to choose which one of them will move to the blue team to balance the teams. Corey tries to persuade Jen to move to the other team.
The next morning, Ramsay asks for the volunteer. Jen speaks up and steps forward. The men are curious to see how she'll perform on their side. The women are happy to see her go.
After the shift, Ramsay tells them the day's challenge. There are twenty items in the kitchen and each of them will have to create a dish. Four dishes per team, and all twenty items must be represented only once in the dishes. The red team jumps in, making a list of the ingredients and staying organized. Jen begins just taking what she wants and rubbing the blue team the wrong way.
During the preparation, Matt slices off the tip of his finger. Ramsay shuffles him off to a medic, and the women press on to finish all their dishes. Ramsay returns to the red team with an important question... where did the tip of Matt's finger go? The red team can't find it and are worried that it may have been cooked in the pancetta. The red team moves on, showing their strong communication.
In the blue kitchen, communication is failing again. The chefs are doubling up items and Sous Chef Scott warns them of their error.
Matt rejoins the line and does his best to support his team.
The red team manages to get their dishes to the window, but the blue team struggles with presentation. Christina and Petrozza set up first, and their dishes are so good, Ramsay awards them both one point. Next up are Matt and Jen, and Jen is rewarded the point. Corey and Bobby come to the table. Corey's dish is a plain, but Bobby's dish doesn't meet Ramsay's standards.
Finally, Rosann and Louross. Chef asks Louross how many he used, but Louross can't lie as he was asked to by Jen. He tells Ramsay the truth and the blue team is one item short. The blue team's punishment is to do all the laundry in Hell's Kitchen by hand. The red team is treated to an exclusive photo shoot.
Louross takes the challenge loss hard, and Jen takes aim at her depressed team mate. She continues to call Louross names under her breath, and Louross is not going to let that happen.
Before dinner service, the blue team is having issues getting along with Jen, while the red team is all smiles and working well together. Chef Ramsay calls the teams together. He tells the chefs that tonight in Hell's Kitchen, they will be visited by two food critics and that will help determine the winner.
The dinners have arrived in Hell's Kitchen, and so have the critics. The critics make sure to order duplicate items from the red and blue kitchens so that they can compare them. Red team is able to get their first dishes to the critics, and they seem pleased. Blue team gets their appetizers up, and again both Ramsay and the critics are pleased.
Matt takes heat from Ramsay because he cut his fillets to inconsistent sizes. But in the blue kitchen, Petrozza is at the receiving end of Ramsay's wrath for cutting open his beef too soon. Louross tries to keep Petrozza rolling, and Jen steps up to manage the kitchen. Next door, Christina stumbles on her salmon and has her rhythm thrown off. The critics aren't pleased with Christina's salmon, and prefer Louross's instead.
The red team begins to fall behind and their customers are waiting. Rosann can't keep organized and is burning her side dishes. And to top it off, she tells Ramsay they're going to be short gnocchi on one of the orders. While the red team flounders, the blue team shockingly surges ahead.
Matt begins to crumble under the pressure and is ruining his beef dishes. Ramsay throws the red chefs out of their kitchen. Their night is over, and Matt takes the loss personally. The stress hits Corey too; she's tired of pulling her weight with no victory. Ramsay divides the blue kitchen to help save the red kitchen.
After service, Ramsay reads the critic comments, and they are what the teams expected. The blue team shined, while the red team drowned. Chef Ramsay tells Corey she is the best of the worst and she needs to choose who will stand before Ramsay tonight.
In the dorms, Christina, Rosann and Matt all defend themselves to Corey, but Corey considers sending all three up for elimination.
During eliminations, Corey nominates Matt and Rosann. But Ramsay wants to see Christina also. All three of them are up for elimination tonight, and defending themselves before Ramsay. Ramsay sends Rosann back to the line, leaving Christina and Matt. Matt admits he is disappointed with his own performance, but still has fight in him. Ramsay then, surprisingly, sends Rosann home. Rosann hands off her jacket and heads home.
Ramsay tells Christina she has been warned, and that Matt is on the fence and leaning towards failure.
