  • What was your first job in a kitchen?

    My first job in the kitchen was as a repairman. I used to fix restaurant equipment. It was then that I was exposed to the inner workings of a large, busy kitchen. That’s when I found what I wanted to do, COOK!

  • What is the first dish you ever mastered?

    A flame-grilled, medium-rare ribeye steak and potato dinner.

  • What is your signature dish?

    Pan-seared chicken breast topped with pineapple and cloves and served with a pineapple and pepper chutney.

  • Any stories of triumph from the kitchen or workplace? Disaster?

    My triumph in the kitchen was when one of my old bosses asked me if he could put one or two of my specials on his menu. I said, “Absolutely!” A workplace disaster was a Friday night dinner and I am knee-deep in orders for steaks and guess what? Yep, no more steaks anywhere in the house. That was a very bad, very long night.

  • Who was your first cooking inspiration?

    My Mamaw. She was a great woman and knew her way around the kitchen. No matter what was going on, she always had time to show me a few things.
